Chilli Scrambled Egg Muffin with our Spicy Turmeric Mayo!

Recipe:

  • For the hash browns, grate 1 large potato, then squeeze out as much excess liquid as possible. Mix the potato with 1 tsp garam masala and a pinch each of salt & chilli flakes. Heat a non-stick pan with a little oil and spoon the potato into 2 rounds. Cook on each side for 3-4 mins or until golden and crispy.
  • Heat a separate pan with a little oil/oil spray and crack in 2 eggs. Add a pinch each of salt & chilli flakes and a dollop of hot sauce, then cook slowly over a low heat, gently stirring with a spatula. Just before the eggs are cooked, remove from the heat (they carry on cooking from the residual heat of the pan so by the time you serve they’ll be perfect).
  • Toast an English muffin and layer with the spiced hash browns, crispy grilled bacon, scrambled eggs & Spicy Turmeric mayo and #FoxItUp!
