Coronation Chicken Cups with Spicy Turmeric Mayo

Coronation Chicken Cups

For a low carb twist on a childhood favourite, try these coronation chicken cups!

2 x free range chicken breasts
1 tablespoon of sultanas
1 tablespoon of slithered almonds
2 gem lettuces
2 tablespoons of The Foraging Fox Spicy Turmeric Mayo
Salt and pepper to taste


On 180 degrees Celsius oven bake 2 chicken breasts for 30 minutes with olive oil and salt and pepper, loosely covered with foil to help retain moisture, then keep to one side and rest for 15mins and cut into bite size chunks.

Once cool mix in the mayo and sultanas

Spoon into lettuce cups, sprinkle the toasted almonds and enjoy!
