Hot Honey Chicken Parm

Indulge in a culinary delight with our Hot Honey Chicken Parmesan. Where crispy, golden-brown chicken meets a luscious blanket of melted cheese. Finished with a tantalizing drizzle of jalapeño mayo, this dish promises to ignite your taste buds with a perfect balance of sweet and spicy flavors.

Ingredients:

Tomato sauce:
1 tbsp oil
1/2 small white onion diced finely
1 tbsp crushed garlic
Pinch of smoked salt (@maldonsalt )
1 tbsp tomato puree
1/2 shot tequila
1 cup chopped plum tomatoes
Water to add to pan as needed
Splash of milk

Chicken:
2 chicken breasts, flattened
1 egg
1/2 cup flour seasoned with salt
1/2 cup breadcrumbs with salt and paprika
Oil to fry

To top:
One ball of mozarella, sliced
100g manchego cheese, grated
8 slices pepperoni
Handful diced chorizo
A few slices of red chilli
The Foraging Fox  smoked jalapeño mayonnaise
2 tbsp hot honey

Method:

1. Preheat oven to 180 degrees.
2. Make your tomato sauce by sautéing onions in garlic and salt, then when cooked a little add tomato paste and deglaze the pan with tequila. Add tomatoes and cook until softened and add a splash of milk. Keep cooking whilst you prep the chicken- you might need to keep adding water to deglaze the pan.
3. Bread the chicken- flour, egg then salt. Heat a griddle pan with cooking oil then fry the chicken each side for 1/2 minutes each side so golden brown.
4. Pop chicken in oven for 10-12 minutes or until chicken is fully cooked.
5. Top with manchego, then chorizo, pepperoni, chili then mozarella. Pop into oven for a further 5-7 minutes until chicken is golden and crispy and the cheese has all melted
6. Drizzle with @theforagingfox mayo and hot honey and enjoy!! Serve with salad or chips. Or both!
