Shaved brussel sprouts with bacon, garlic and a champagne deglaze

A classic Christmas side but with a twist!

Ingredients:

50g unsalted butter
4 rashers bacon, chopped into small squares
1 tbsp garlic puree
Splash of champagne or white wine
500g sprouts, washed
Salt and pepper to taste

Handful of walnuts
1 granny smith apple, thinly shaved using a mandolin
1 tbsp grated/sliced parmesan

Dressing:
1 tbsp @theforagingfox smoked garlic mayonnaise
Splash of plant based milk

 

Method:

Melt the butter in the pan and then fry the bacon. Stir/flip occasionally- we want it to be brown and crispy and the fat to be bubbling.
Whilst the bacon cooks, set your mandolin to level 1 and slice all your sprouts- careful of slicing your fingers!
Deglaze the pan with your champagne or wine then add in your sprouts and reduce the heat. They will wilt the more they cook- keep turning and mixing.
When done, mix in your apple then add to a plate. Top with walnuts and parmesan.
For the dressing, combine all ingredients and drizzle over. The best ever sprouts recipe!
