The Steak Sandwich

Ingredients:
– 160g Steak (bavett, sir loin, fillet or ribeye will do well)
– 1x onion (sliced)
– 1 x Red bell pepper (sliced)
– 1 x Garlic (crushed)
– 1 Sprig Thyme
– 1Tsp Crispy onions (can be bought ready)
– Butter
– 1 x Ciabatta
– Small handful of Rocket salad
– 1/2 tsp Cayenne pepper
– Smoked Jalapeno Mayo
Method:
– Take the steak out the fridge and leave to get to room temperature (15 – 20mins)
– In the meantime, caramelise the sliced onion on a medium low heat ( this should take 20mins… you can do this in advance) onions should be sweet with a brown colour.
– Season the steak with oil, salt, pepper and cook to desired temperature (I cooked 3mins each side and used thumb to finger method) just before finished add butter, rosemary, garlic and cook a touch further until butter is foamed. remove the steak and leave to rest for 10mins.
– Whilst the steak it resting, using the same hot pan toast the bread in the leftover oil.
– Remove bread and cook the pepper for 5mins on a medium to high heat with cayenne pepper to give it a little heat!
– Now that every thing is ready…. assemble your sandwich and enjoy!
