Sweet Potato Rostis: in the kitchen with @MyGoodnessRecipes

With many of us facing the challenges of moving our social and dining experiences indoors and in the home, we’ve reached out to our favourite foodies to bring you our Foxy Chef kitchen series, showing you first hand how to make tasty, simple and nutritious meals that the whole family will love!
Starting off with the amazing @mygoodnessrecipes, all smiles in the kitchen making sweet potato rostis with our beetroot ketchups.

“This is such a delicious weekend brunch option. It’s quick and simple to make with very few ingredients. Not only is it vegan, gluten free and without nightshades, it also looks and tastes amazing. Why not give it a try this weekend?

INGREDIENTS
100g sweet potato
1/4 onion
Pinch salt
Pinch Italian herbs
1 tsp cornflour
1 tsp flour (buckwheat or plain)
1 tbsp coconut oil

I’m adding a dollop of Foraging Fox nightshade free ketchup to mine. It’s made with beetroot instead of tomato and comes in Smoked or Original.”

*Original is 100% nightshade free, Smoked has traces of Chilli and Hot contains Chilli
